AJ’s Protein Waffles for a Rainy Day
Protein Waffle Recipe
Wet Ingredients:
2 tsp vanilla extract
2 TBsp of melted coconut oil
3 eggs at room temperature
1/3 cup of cottage cheese (you can also do creamy peanut butter if you love peanut butter or greek yogurt- whatever protein ingredient you have)
Dry Ingredients:
1/2 cup quick oats (add some flaxseed for health)
1/4 cup of your favorite whey or plant protein powder. Whey is usually crispier (flavor is what you’d like- I usually use vanilla)
1/4 cup monk fruit sweetener or whatever sweetener you prefer
1/2 tsp baking powder
1/4 tsp sea salt
Directions:
Blend wet ingredients in a blender or food processor, blend in dry ingredients, use your favorite waffle iron, typically 2-3 min, add favorite toppings, voila ♥️
Calories: 559 Protein 34g, Net carbs 6.9g, fiber 2.7g, sugars 2.2g (approximately- you can add more toppings for more protein, fiber, etc.)
